what are your favorite i-cant-believe-its-healthy foods? i.e. favorite tasty yet healthy foods

hi,i'm new-my name's ale,i'm from italy and I've been a vegan for a year and a half now.
These days my favourite recipe is a vegetable sauce made with peppers, eggplants, carrots and courgettes. Cook them for half an hour in water or tomato sauce, add some herbs and salt and it's done. You can eat tons of it or use it as a sauce for pasta!!

Three Great Tofu Recipes [04 May 2005|08:05pm]

I went to a free tofu sampling today hosted by my college and Maribeth Abrams, who's the host of the Tofu 1-2-3 video and is kinda well-known for being an expert on the stuff.

Anyway, she shared with us three absolutely delicious vegan recipes from her upcoming cookbook, No-Cholesterol Tofu 1-2-3 Cookbook, and I figured I'd share them.

Chocolate Mousse, Shells with Tofu Ricotta Cheese, and Mediterranean Tofu.Collapse )

I personally found the mousse — which was really a lot more like pudding that mousse — to be too sweet, so I might reduce the maple syrup a bit. With the Mediterranean Tofu, we had it in teensy little bread bowls, but I think it would go wonderfully over brown rice or even in a sandwich. The shells could use some more seasoning, maybe some fresh parsley or basil, but it's a nice base to work with.

Baked Apples and Bananas [06 Feb 2005|01:25pm]
This is great served over oatmeal or waffles if you don't want to eat it plain. Yummy!

2 apples, peeled,cored and thinly sliced
2 bananas, split lengthwise and cut in half
1/2 lemons, juice of
1/2 cup dark brown sugar
1/4 cup light brown sugar
1 cup apple juice
1/2 teaspoon ground cinnamon
1 teaspoon vanilla

Preheat oven to 450 degrees.
Combine apples and bananas and put into a shallow baking dish.
Sprinkle with lemon juice.
Combine remaining ingredients except vanilla in a saucepan and boil until sugar is dissolved.
Remove from heat, add vanilla, and pour over bananas and apples.
Bake in 450 degree oven for 20 minutes, or until juices are bubbling.
